How would you use the offset function in Excel?

This function is useful for changing the directionality of referenced information in dragging formulas, e.g. from vertical to horizontal, or creating ranges of references in dragging formulas. They wanted me to use it to create more easily refreshed data sets in models using Pivot tables.
