Outragious demands from middle management as far as hours and scheduling go. As a 10+ year food service manager I had the brand new experience of working multiple back to back 70 and 80 hour weeks. Poorly designed systems and procedures. Inventory loss and waste has less to do with running the systems and more to do with applying practical and common sense controls not specific to pollo. Recently had the VP of Operations comment at a conference about how every single one of her direct reports was in position less than 1 year.
